Fabien Moreau presides over this 11.5-hectare domaine--including fully six hectares of grand cru--that has been certified organic since 2010. The Chablis AOC is the only cuvée where the domaine's holdings are supplemented by some purchased grapes. Hand harvesting followed by fermentation and élevage on the lees in a mixture of stainless steel, used barrels and new barrels is the order of the day here, with some of the higher appellations seeing up to 10% new oak.

Our family should keep alive a tradition that has lasted for six generations. This means: Respecting Chablis’ vineyard terroir, the only one of its kind in the world. Working in a rational way to maintain our grapevines and soil. We labor the land to avoid having to use weed-killers, employ natural methods (confusion sexuelle) to eliminate the need for insecticides, and carry out regular daily inspections of the grapevines to prevent and treat disease. Applying a comprehensive strategy for effective yield management. By carefully managing our yields, we are able to obtain a high level of concentration of sugar in each grape and produce a wine that reflects the true character of our vineyards.
Our vineyard is located in the village of Chablis, in the very heart of the Chablis country, on the left bank of the Serein River, with a south-south east exposure. It is located in the climat Les Pargues. The soil is kimmeridgien calcareously clay which goes back to the upper jurrassic age (portlandien). Average age of the vines: 47 years.
