Terroir: The vines are located in the common of Chavanay and Millery. The soils are granite with southeast exposure and relatively flat vines.
Grape Variety: Majority Syrah
Vine Age: 30 years on average
Vinification: Harvested by hand and careful sorting is carried out in the vineyard by the pickers. The grapes are vatted by gravity when they arrive at the cellar and then are partially destemmed while a third of the grapes remain in the whole cluster. Fermentation is done with indigenous yeasts and moderate temperatures are maintained for very gentle extraction. Devouring happens after two to three weeks following tasting.
Aging: 1 year in barrels
Tasting: Structural with a nose of black fruits and spice. Pair with Machon of Lyonnaise charcuterie, grilled meat, goat cheese, or a backyard barbeque.
